Ingredients
- 2 ea marinated chicken breast 1 full breast butterflied in half (yogurt marinated and coated with bread crumbs. Same as we use for chicken parm)
- 0.050 kg baby arugula
- 3 oz marinated tomatoes (bruschetta tomatoes)
- 1.5 oz marinade liquid
- 1 pinch salt
Instructions
- cook the chicken in the deep fryer for 3 minutes or until it has reached a minimum internal temperature of 165°
- immediately season with salt
- place the fried chicken on a sandwich plate
- in a mixing bowl, combine the arugula and the marinade liquid
- cover the chicken with the arugula dressed in the marinade liquid
- top with the marinated tomatoes
