Ingredients

  • 2 ea marinated chicken breast 1 full breast butterflied in half (yogurt marinated and coated with bread crumbs. Same as we use for chicken parm)
  • 0.050 kg baby arugula
  • 3 oz marinated tomatoes (bruschetta tomatoes)
  • 1.5 oz marinade liquid
  • 1 pinch salt

Instructions

  • cook the chicken in the deep fryer for 3 minutes or until it has reached a minimum internal temperature of 165°
  • immediately season with salt
  • place the fried chicken on a sandwich plate
  • in a mixing bowl, combine the arugula and the marinade liquid
  • cover the chicken with the arugula dressed in the marinade liquid
  • top with the marinated tomatoes
